Doesn’t this picture look delish??? I’m always on the hunt for healthy tasty dishes, taking old favorites and making them into healthier versions, with way more flavor! Lately I’ve been really conscience of how much sugar and additives we are consuming. If you really look at labels it’s a little scary what you see on the ingredients list. I’ve made it a point that if I can’t pronounce it, never heard of it or it sounds chemical-ly then I’m not buying it! I’ve also recently switched to mostly if not all organic foods in our house. I feel much healthier over the last few weeks, so I hope it’s paying off! Anyway, I’ve made it a priority that I’m cooking things from scratch and ensuring all the foods in our house are highly nutritional. I came up with this recipe after making the homemade tortilla chips for my son’s birthday party. I thought, what a good idea! Chicken Nachos, who doesn’t love nachos??
Now, I tend to stay far away from things that say, “light,” “low-fat,” and “diet” they usually are full of extra junk to make it taste better. I really feel that consuming quality ingredients is the key to weight-loss and overall health. Anyway, here is the recipe!! Super easy!
Healthy Chicken Nachos
Homemade Tortilla chips
-4-8 small corn tortilla (I use the Whole Foods 365 organic brand, the ingredients are just corn, nothing else)
Using a knife or pizza cutter cut tortillas into 2 inch strips. Place the strips on a baking pan and drizzle a small amount of olive oil and sea salt. Using your hands mix together to evenly coat. Place in a 400 degree oven for 5-11 minutes. Every oven is different so keep an eye on them. They should just be slightly browned and crisp. Take out of the oven and let cool slightly.
-1 chicken breast either store bought rotisserie or homemade (homemade version, just bake chicken seasoned with salt and pepper with 1 cup of chicken broth in the oven on 450 degrees for 30-60 minutes depending on how thawed the chicken is, I often times take frozen chicken straight from the freezer and put it in the over, that takes 1 hour)
-cube cooked chicken, place in a saute pan with 3 tablespoons of water
-Add 1/4 teaspoon of the following seasonings (chili powder, cumin, cilantro, lemon or lime juice, pepper) adjust the seasonings to your liking. Mine is less spicy for the kids
-cook chicken until seasonings are mixed, water is dissolved and chicken is warm
Arrange homemade chips on a plate sprinkle with 1/4 cup cheese and 1/4 cup chicken, microwave for 20 seconds or until cheese is melted. Sprinkle on tomatoes, organic salsa, mango salsa, cilantro and any other toppings you’d like!
Serve warm! I love the Whole Foods tomato salsa and mango salsa, you can find both near the fruits and veggies! My Homemade Ranch Dip would also be delish on top of this dish instead of adding sour cream.
